We’re deep in the phase where Finn wants to feed himself but also insists on “participating” with dinner. Which usually means handing me random ingredients and yelling “dadddaaaaaaaaaaa!” So we needed a recipe that checks a few key boxes: easy to throw together, hands-on enough to let him pretend to “help,” and packed with flavor and veggies. Hello: Zucchini Feta Burgers.
They’re light, juicy, and full of bright flavor from lemon zest and feta. The zucchini keeps the burgers super moist (no dry turkey patties here), and they work just as well in a pita with tzatziki as they do cut into bite-size pieces for little mouths.
These burgers are one of those unicorn meals that manage to feel grown-ups and kids at the same time. They take under 30 minutes from start to finish, you can prep them ahead of time, and they’re incredibly flexible. Serve them slider-style for kids, tucked into a pita or over a Greek salad for adults, or even crumbled into rice bowls with extra veggies.
The flavor combo of zucchini, feta, lemon, and a touch of salt gives big Mediterranean energy. And if you’re in the baby food phase, you can easily set some mixture aside before salting and pan-sear tiny patties for finger food.
