Happy Wednesday friends! First things first: I owe you an apology for the radio silence last week. Life got a bit hectic on our end (more on that soon // lots of exciting things in the works!), but to make it up to you, you’re getting an extra recipe this week. A double feature if you will :)
Now for today’s recipe: I’m PUMPED because we’re diving into one of my absolute favorite proteins to feed Finn: salmon.
Why salmon?
It’s basically a baby superfood. Salmon is loaded with DHA and EPA. These are two types of omega-3 fatty acids that are VERY VERY important for brain development. It’s also rich in high-quality protein, vitamin D, and B12, all of which support growing bodies and brains. And maybe most importantly, it’s soft and flaky when cooked properly, which makes it ideal for these little mouths while they are just learning to chew.


And zucchini?
Zucchini is a mild, easy-to-digest veggie that’s high in water (hello hydration), fiber (great for digestion), and vitamin C (for immunity!). When sautéed with olive oil and garlic, then finished with a touch of parmesan, it transforms into something silky, flavorful, and packed with flavor. A total win. Bonus - its a delightful sauce if YOU want to use it for yourself, family, older kids etc. Fold it into a pasta and you’ve got green mac and cheese. Or yellow if you opt for a yellow summer squash. You can do it either way - it’ll work perfectly.
