Baby's First Egg Bites
Move over Starbucks, I'm coming in hot with a broccoli packed take on the Starbucks cult fav!
We’re in our baby Starbucks era and honestly, I’m into it. These Broccoli and Sun-Dried Tomato Egg Bites are the baby version of the cult fav Starbucks egg bites and they are absolutely perfect for our little kiddos (pending no egg allergies), insanely busy mornings, and even any older kiddos. I make a double batch every time because both of my kids will down these and same goes for Thomas and myself!
Here’s why I love them: they’re quick, customizable, packed with protein and veggies, and they freeze like a dream. You can whip them up on a Sunday, pop them in the fridge or freezer, and breakfast is basically done for the week. It's a win for babies, toddlers, and every other mouth in your house.
First and foremost, they’re so easy. Like almost embarrassingly easy. They're the kind of thing you can make while holding a baby on your hip or opening the dishwasher with your toes (I speak from experience). They're loaded with protein from the eggs, a pop of dairy from feta, and two veggies that add flavor, texture, and nutrients. Basically, they are EPIC.
They're also endlessly customizable. Want to swap in some chopped spinach or shredded zucchini? Go for it. Want to try a version with finely shredded chicken and cheddar? Yes please. These little frittatas are the definition of “choose your own adventure.”
